खसिको सेकुवा [Mutton Sekuwa]




Khasi or lamb sekuwa is a type of char grilled meat marinated with traditional nepalese tangy spices and herbs,enjoyed all over Nepal. "Sekuwa" refers to a way of cooking similar to grilling, it can be deep fried as well but its better to grill over charcoal or wood coal fire for better flavor and taste enhancement. A tangy dipping sauce and puffed rice along with some fresh garden green salad is famous in Nepal.

Ingredients

Mutton 1 ½ kg boneless (Cut in to cube shapes along with few skin and fat meat)




Marination ingredients
Turmeric powder 1 tsp
Salt as per the taste Cumin and coriander powder 1 tbsp each Red chili powder ½ tbsp black pepper powder 1 tsp Garam masala powder 1 tbsp Black salt 1 tsp Ginger, garlic and green chili paste -2 tbsp Yogurt 2 tbsp 1 lemon juice Mustard oil 2 tbsp

Method
Mix all the spices and ingredients with mutton,mix well and keep the marinated meat aside for 3-4 hours.
Now, pierce each pieces of meat on a iron rod [ for grilling] as seen in the picture, Sekuwa is better grilled over charcoal or wood coal fire for better flavor and taste, keep turning the bars [rods] in between, cook until the meat becomes soft and aromatic.
















It is better served with puffed rice, chutney, and some fresh salad.
