गुन्द्रुकको अचार 


Gundruk is one of the most popular ethnic food loved and enjoyed by all ethnic communities all over Nepal. Gundruk is dried & fermented leafy vegetables, made generally from green leaves from Mustard, radish, cauliflower etc. It can be made as a Curry or as Achar. It is served as a side dish with the main meal and is also used as an appetizer. undruk is an important source of minerals.

Ingredients

Gundruk 1 bowl Green Onion (chopped) 1/2 cup Garlic (chopped) 4 cloves Ginger (chopped) 1 small size Cumin Seed (roasted) 1 tsp boiled tomato 1 large
Dry red chilies (roasted) 5-6 tsp Turmeric powder ½ tsp Roasted mustard oil 3 tsp Fenugreek seed 1/2 tsp Salt to taste Coriander 1/2 cup Mustard Oil 4 tblspn

Procedure
Soak Gundruk in a bowl with hot boiling water and keep aside for 10-12 Minutes.  Now in grind dry chilly, roasted cumin, ginger, garlic, tomatoes,to a fine paste and keep aside then in a bowl mix soaked  Gundruk, mix the previous mixture of tomato, add chopped spring onion [optional], salt.and mix well.
 Now take a frying pan and heat mustard oil,  temper Fenugreek seed and turmeric powder. Pour hot tempering mixture over the mixture of Gundruk and mix well.  Add freshly chopped coriander leaves and its ready to be served. Gundruk ko achar is best served as pickle [achar- like a side dish in a meal] or can be enjoyed as it is.
