Preparation time - 45 minutes
IngredientsRaw mango : 700 gm
Jaggery/sugar : 700 gm
Cumin seeds : 1 tsp
Nigella seeds : 1 tsp
Dry red chilies :4
Roasted cumin powder : 1 tsp
Red chilli powder :1/2 tsp
Salt :1/2 tsp
Hing : 1/4 tsp
Cooking oil : 2 tbsp
Method
1) Clean raw mango, peel, remove the bone, cut in to medium sized cubes, and keep aside.
2) Now take a sauce pan, heat oil, fry Dry red chilies, cumin seeds and Nigella seeds, fry until brown, add hing and stir well
3) Add cut mango and stir well, add red chilly powder, salt and then add Jaggery, cook until the mango softens and keep stirring in between. once the mango is cooked well, add roasted cumin powder and cook for another 5 minutes in low flame.
4) Turn off the heat and let it cool completely.
5) The pickle is ready to be served and may be stored in a glass jar and should be consumed within a month.
